As I learned on my Quaker Oats Company weekend, oatmeal is a delicious heart healthy choice. It can be used to create so many different recipes, including pancakes. Now, Quaker has made it super easy for me thanks to their Quaker Oatmeal Pancake mix.

I’m not much of a cook but even I was able to whip up these delicious and nutritious blueberry pancakes:
Heart Healthy Blueberry Pancakes
- 1 Cup Quaker Oatmeal Pancake mix- slightly packed
- 3/4 Cup skim milk
- 1/4 cup egg white
- 1/4 cup fresh or frozen (thawed and drained) blueberries
Heat skillet over med-low heat. Skillet is ready when drops of water sizzle, then disappear almost immediately.
Combine mix, skim milk, and egg white. Stir with wire whisk until large lumps disappear. Let stand 2-3 minutes to thicken. Add blueberries.
Pour slightly less than 1/4 cup batter for each pancake onto a skillet that has been coated with cooking spray. Turn when pancakes bubble and bottoms are golden brown.
Makes 7-9 pancakes.

Happy mothers Day!
This is a great idea. I’m a big fan of oatmeal in general, and it never even occurred to me to make pancakes with it. I get heart healthy instant oatmeal from Trader Joe’s (I know, I know, microwaveable isn’t as healthy, but I have my limits). I make two packets in the morning with water, add a handful of blueberries and pomegranate seeds and I’m good to go. Great for lowering cholesterol, providing fiber and terrific antioxidants, all in two minutes. I’m going to add your recipe to my regimen.
