My oatmeal challenge

After being inspired by my Quaker oatmeal weekend, I have decided to do my own 30 day oatmeal challenge. I will eat something oatmeal related every day for the next 30 days.

Today’s choice was Matisse and Jack’s bake-at-home snacks. I chose the Chocolate Chip Power Snacks which are packed full of protein, omega-3, calcium, iron, and fiber. They are super easy to make, all you need is applesauce, vegetable oil and water. Mix everything up and about 30 minutes later you have some fantastic treats!

The main ingredient is M&J’s PowerMix which consists of Organic Whole Grain Rolled Oats, Whole Grain Oat Flour, Flax Seeds, Ground Soy Nuts. I added some frozen blueberries to boost the antioxidant power. Here is the nutritional breakdown:

As you can see from this picture, my family LOVED them. They were tOATally delicious!

Yep, we eat old fashioned oats almost every day! Kids love it with PB.

I eat oatmeal every morning, and lately I’ve been making it with:
1/2 c oats
1 c skim
dash brown sugar, a lot of cinnamon!
swirl of maple syrup (sugar-free)
1 honeycrisp apple chopped up
handful of fresh cranberries that burst.

I also love custard oatmeal — you make it on the stovetop and add a beaten egg just at the end — incredible!! And then add cinnamon, syrup, and usually strawberries or blueberries. So good!

Or the famous Elvis oatmeal: with a banana and PB :)

Yep, we are in! We eat Steel Cut Oats almost everyday … great with pumpkin mixed in!

Oatmeal for 30 days? I can do that. Something oatmeal related once a day right? I’m in. I’ll start today. I have tons of the instant packets of Quaker Oatmeal. Does that count? I hope so.

Yum – those look good! I will try to find that next time I am at those stores. I’m not sure about eating something oatmeal-related EVERY day. Hmmm…

here’s one of my very favorite recipes for a special treat that uses oats and whole wheat flour and very little oil! it may taste similar to the Chocolate Chip Power Snacks you talked about:

Oatmeal Chocolate Chip Bars

1 egg
1 egg white
¾ cup sugar
½ cup packed brown sugar
3 tbsp canola oil
1 tsp vanilla
1 ½ cups whole wheat flour
1 tsp baking soda
½ tsp salt
1 ½ cups rolled oats
½ cup mini chocolate chips

Coat a 9×13 pan with cooking spray and set aside. Mix the egg, egg white, and sugars until smooth. Add the oil and vanilla, mix for 10-15 seconds. Add the flour, baking soda, and salt. Mix until just blended. Add the oats and incorporate with on/off turns. Sprinkle with chocolate chips and lightly mix them in. Transfer the dough to the pan. Wet your fingers with water and press the dough evenly into the pan. Bake at 350F for 15-20 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan and then cut into squares.

Those look delicious, and the ingredients all look great and healthy. I’ve been having oatmeal for breakfast lately. Mainly because my 9 month old loves it too. The day’s I had pancakes with my 3 year old I was dragging, but the oatmeal energy lasted much longer. I’ll totally try the Chocolate Chip Power Snack, and Meredith’s chocolate chip bars. These are all great recipes. Up till now the only thing I knew how to make was oatmeal pancakes. Thanks for sharing.

I pretty much already eat oats every day. I did post a recipe for chocolate peanut butter cup oatmeal on my cooking page the other day, yummy breakfast or dessert!
